This is summery from a some information that was published in Loompanics Unlimited catalog of the early 90's:

The process is easy but to have a really fine wine, then the process takes at least a year.

Most of this time it sits there maturing;

This recipe is for 4 litres of cannabis wine:

The method:

Step One

stuff your large container(say 5 litres) with Cannabis material, including stems which are cut into small pieces.

The more cannabis material you get into the jug, the better the wine will be;

also the better the quality of the cannabis material, the stronger the wine will be.

Make sure there are no seeds though, as the seeds are oily, contain no THC, and can cause a bad flavor in the wine.

Step Two:

Heat one liter of water to boiling point.

Do not use an aluminium pan to do this.

Completely dissolve 1 kilo of white sugar(there are no natural sugars in cannabis, unlike fruit, and it is the sugar than turns into alcohol) into the boiling water.

Step 3

pour the hot water with the sugar totally dissolved in it, into your container of cannabis material.

Cap the jug, shake well, then loosen the cap and set the jug aside to cool to room temp.

Step 4

In a small amount of room temperature or lukewarm (not HOT!) water dissolve entirely one cake of fresh yeast, or one entire package of active dry yeast,

or one tablespoon of bulk dry yeast.

You may have to stir it a lot, but the yeast must be completely dissolved in the luke warm water.

Add more water if necessary.

Caution

Before precedding to the next step, make sure your jug has cooled down to room temperature completely,

if not then the water if it is too hot will kill the yeast, and you will not end up with wine;

Step 5

Pour the yeast solution into the jar with the cannabis material, cap and shake well, but immediately remove the cap from the jar.

Fill the jug if necessary with cool water so that there is an air space of around 8 to 10 cm of space as this is necessary as the jug will overflow when fermentating;

cap the jug, shake again, then remove the cap and replace it on the jug loosely;

If the cap is not replaced loosely onto the jug, the bottle will explode when fermentation begins.

Step 6

Put the jug on several thicknesses of newspaper, and put it in a dark cool place.

The contents of the jug will begin to ferment vigorously within a few hours.

if the bottle has been filled too much, then it may bubble over out of the bottle;

do not worry if this happens, just wipe the bottle and replace the newspapers.

Do not add more water if it overflows.

This peroid of sustained fermentation lasts for several days.

if you push the cannabis material down, with a wooden spoon, into the jug during this time, it helps,

but be sure to replace the cap loosely each time.

Step 7

Tjis active fermentation will continue for 2 weeks at least;

The total fermentation time will vary, but should be around 4 weeks.

The active fermentation of the first 2 weeks will gradually subside and this can be observed inorder to determine when fermentation has ceased.;

a way to determin if fermentation has ceased is to tip the jug gently back and forth, and if no bubbles of gas rise up, then fermentation is complete;

Do not shake the jug at this time.

might have to have a bash at this john , as of the way of cannabis material do you just mean trim and stems or buds as well.

definately having a bash at this i bet it is a good idea to put in the corner of your g room during fermentation as this will give of co 2 so everyone a winner both you and the plants

I understand salvator;

many cannabis users though do enjoy a drink ot two;

Personally love to drink red wine and absinthe(when I can afford it);

Here, though, moderation is the key,

as alcohol is a addictive drug when taken in excess;

where as pot is not.
