Barbera now looks better. But brestovica was tottaly eated by yellow jackets. Brestovica good on taste for me also. Most done for harvesting in this year at this moment. Merlot and cabernet still green by taste l, cabernet even more green and i will wait few weeks more before harvesting of course if weather will be not tottaly bad or at least without freezing.

Traminer rose now done for harvesting. Maybe i will harvest it few days later with part of chaselas white. Cabernet savingon and merlot now almost done for harvesting, but better keep it more. In cabernet acids still bit high, and some part of merlot still bit green.

THis season go to end. I already start harvesting but now harvested not all. Weather still fine and Some grapes when is possible will be harvested later. I made some final photos.

This is fresh juice from regular merlot. From merlot on andros roots looks almost same maybe bit more light colour, on taste acids is more low sweetness maybe bit more high, but regular merlot is also very sweet 22-25% for sure. And smashing berries from andros roots is much more soft also berries more easily separated from the branches without residues. In This year i added about 10% merlot from andros roots to regular merlot i want see what results will be here. Next big bucket i will fill with mix of all blue grapes which i have now it is merlot, cabernet savingon, cabernet cortis, and merlot from andros roots. I have 5L separate cabernet savingon already now, all other will go in mixed wine. Later i will do wine from savingon blanc. I will keep it 1-2 weeks more if all will be fine.

For some reason in pure cabernet wine from this year very many foam. This wine starting fermentation very slow maybe 3-4 days later than traminer and chaselas wine but after starting fermentation go very active. Foam send all grape skins on top. Water in bottle now looks like this here still not so many pure wine i think.

This year I not interesting about wines but now I finaly made some first botteling in this year. Cabernet now is very dry and with high amount of alcohol and currant notes in taste, wine like for mens not for woman, in late taste I can feel even something like concentrated black tea wich maybe from too long waint with botteling. savingon blanc has interesting mango taste with shades of buckwheat very unsual taste as for me. maybe all wines contain some amount of plastic but I don`t have good solution to avoid this.

THis is how looks fresh savingon blanc for example. Totally this quality not absolutely great but it is best savingon blanc for a last years. taste is soft and with garmony about acid and alcohol content. here I can say about mango taste not like this regular wine where maybe somebody can feel some smallest amout of mango fruit like it is can be with low cost wines from shop. Here taste really almost like a fresh mango fruit with about same acids content like a pure mango juice but much more dry but still nice and soft like real fruit, later it is feals more like some drugs taste or maybe it is just not enough filtered  . I am now bit drinking here like half of bottle savingon blanc.

now i try cabernet savingon it is aslo very very frutty  or maybe it is red berries who know,,, taste is also very soft like pure berries. very maturated red currant or so. acid is realy not in like young fruit much more like very maturated and soft on taste more close to old cherry but not same.

 

also looks like even saviongon blanc don`t have fast reaction with oxygen after my long time waiting with botteling. most negative side of this wines now is plastic.

Traminer + shaselas white also now looks like interesting wine. Taste more like matured lemon with regular wine taste but acid is not too high. after tasting also is interesting and unusual I even cant` describe it maybe some field and tropical notes.

now I thinking about wines wich I pressed from grape skins after draining the main part of the wine  and I can say in mostly case this wine is no good for regular storing and drinking. looks like it is better for cooking because amount of acids bit high and wine can give unpleasant precipitate on the bottle and some unpleasant tones in the taste resembling old canned food , but still possible for drinking also aftertasting still smooth.

 

Maybe for evoid negative effect in this part of wine need make botteling more earlier also avoid any sediment in the bottle by double transfusion maybe it is can help fix unpleasant tones in taste. but tottaly think no sence change something in future. after 100-200ml this unregular wine feals also not so bad, And  I don`t have many places where need this wines, just for my self almost,

I am still bit cooking here and drinking. This is for example big pieses of porks legs with bones wich I buyed very cheap and cooked with mix of apple cider, some grape and apple juice and bit of second wine from past year grapes. not so bad about taste to savingon blanc wine

 

unfortunaetly this meat give bad long time aftertasting.

I opened one bottle of merlot from a past year. And acids bit high. I expect bit better results but with pure natural wine I can`t be sure about anything. Really taste is good and nice smooth flavour is here just from start I can feel some asids. maybe some air got in bottle because wine was not stabile after botteling.

 

Now i feel even some small natural sewi sweetnest. Sorry my cup is dirty bit this time. Anyway I belive this natural quailty not so bad. wine have thin taste like very diluted coffee

 

I can`t say some like it is my big won in winery making, but in real life this wine also can be drinked. now it is feels like retro wine,

This is other bottle of same wine but with regular corc. Feels better for me. but corc can give some unregular taste for upper part of wine in bottle.

 

totally I belive it is interesting quality of wines but of cource not greatest wines ever. winr with cherry berries taste. middle about smooth.

Wines from same bottling in bottle now looks like this/ Merlot has middle potential but not short and it is good, I belive it is some special wine even if it is don`t look feals really special. for me now this wine look absolutely fine and natural.
